The Daiquiri: Three Ingredients, Nowhere to Hide

Rum, lime, sugar, and nowhere to hide. The Daiquiri is the fastest test of whether your technique holds up.

The Daiquiri is rum, lime, and sugar. There is no vermouth to blame, no bitters to cover a bad pour, no egg white to disguise a weak shake. Whatever you get wrong shows up in the glass.

That is why it belongs in your rotation. A drink that exposes mistakes is a drink that fixes them.

The spec

Start here: 2 oz white rum, 1 oz fresh lime juice, 3/4 oz simple syrup. Shake hard with cold, solid ice. Strain into a chilled coupe. No garnish required.

Once you know what the baseline tastes like, adjust in quarter-ounce steps. Not before.

Measure it

A Daiquiri lives inside a narrow band. An extra quarter ounce of syrup turns it flabby. A short pour of lime leaves it thin and dull. Measure every component with a jigger. The case for measuring is its own article; the Daiquiri is the drink that proves it.

The lime does half the work

Bottled lime juice is pasteurized and oxidized, and this drink cannot hide it. Juice your limes the day you serve, ideally within a few hours.

Shake like you mean it

Ten to twelve seconds, hard, with cold solid cubes. The shake chills the drink, adds the water it needs, and whips air into the citrus. A polite shake makes a warm, syrupy drink. Hollow freezer ice makes a watery one.

Which rum

Start with a clean white rum you would drink on its own. Dial the drink in, then experiment: split the base with something funky and Jamaican, or try an aged rum and pull the syrup back slightly. The spec is a platform, not a cage.
