Simple Syrup

Simple syrup is a 1:1 sweetener made by dissolving equal weights of white granulated sugar and water with gentle heat, then cooling. It carries no flavor beyond clean sweetness and is the canonical sweetener for Whiskey Sours, Daiquiris, Sidecars, Mojitos, and any cocktail that wants neutral sweetness without the molasses notes of demerara or the floral character of honey. A standard batch keeps two weeks refrigerated, longer with a half-ounce of vodka added as preservative.

Ingredients

  • 1 cup (200 g) white granulated sugar
  • 1 cup (240 ml) hot water
  • 1/2 oz vodka, optional, as a preservative

Method

  1. Combine the sugar and hot water in a small saucepan or heatproof container.
  2. Stir until the sugar fully dissolves.
  3. Cool to room temperature.
  4. Stir in the vodka if using. Pour into a clean bottle. Seal and refrigerate.

Pro tip

Measure by weight when you can. Sugar volume varies with grain size and packing; weight is the only way to get a true 1:1. For a 2:1 rich simple, hold the water and double the sugar.
