The Sazerac is a stirred whiskey cocktail made with rye, Peychaud's bitters, and a touch of sugar, served in a chilled rocks glass rinsed with absinthe and finished with an expressed lemon peel. It is widely cited as one of the oldest American cocktails.

Method

  1. Rinse a chilled rocks glass with absinthe and discard the excess.
  2. Combine rye, simple syrup, Peychaud's, and Angostura in a mixing glass.
  3. Fill the mixing glass with ice and stir for 20 to 30 seconds.
  4. Strain into the absinthe-rinsed rocks glass. No ice in the served drink.
  5. Express the lemon peel oils over the glass and discard the peel.

Garnish

Lemon peel, expressed, then discarded. The oils stay.

Pro tip

The absinthe is a rinse, not an ingredient. Coat the inside of the glass, pour the excess out, and you will smell anise on the rim of every sip.
