Mojito
The Mojito is a built cocktail made with white rum, fresh lime juice, simple syrup, mint, and soda water, served in a highball glass over crushed or pebble ice. The mint is muddled gently to release oils, not crushed to a pulp.
Ingredients
- 2 oz white rum
- 1 oz lime juice
- 0.75 oz simple syrup
- 8-10 mint leaves
- 2 oz soda water
- Mint sprig
Method
- Add mint leaves and simple syrup to a highball glass. Press the mint gently with a muddler to release the oils.
- Add white rum, lime juice, and ice.
- Top with soda water and stir briefly.
- Garnish with a mint sprig.

Pro tip
Press the mint, do not crush it. Pulping the leaves releases bitter chlorophyll. You want oils, not greens.
