Mojito

The Mojito is a built cocktail made with white rum, fresh lime juice, simple syrup, mint, and soda water, served in a highball glass over crushed or pebble ice. The mint is muddled gently to release oils, not crushed to a pulp.

Ingredients

  • 2 oz white rum
  • 1 oz lime juice
  • 0.75 oz simple syrup
  • 8-10 mint leaves
  • 2 oz soda water
  • Mint sprig

Method

  1. Add mint leaves and simple syrup to a highball glass. Press the mint gently with a muddler to release the oils.
  2. Add white rum, lime juice, and ice.
  3. Top with soda water and stir briefly.
  4. Garnish with a mint sprig.

Pro tip

Press the mint, do not crush it. Pulping the leaves releases bitter chlorophyll. You want oils, not greens.
