Penicillin
The Penicillin is a shaken cocktail made with blended Scotch, fresh lemon juice, honey-ginger syrup, and a float of Islay Scotch, served in a rocks glass over fresh ice. It was created by Sam Ross at Milk and Honey in New York in 2005.

- 2 oz blended Scotch
- 0.75 oz lemon juice
- 0.75 oz honey-ginger syrup
- 0.25 oz Islay Scotch (float)
- Candied ginger

Method
- Combine blended Scotch, lemon juice, and honey-ginger syrup in a shaker.
- Fill with ice and shake hard for 10 to 12 seconds.
- Strain into a rocks glass over fresh ice.
- Float the Islay Scotch on top by pouring over the back of a bar spoon.
- Garnish with candied ginger.

Pro tip
The Islay float is the whole point of the drink. It rests on top of the lemon-honey body, so the first sip is smoky and the rest is warm.
