Paloma in a highball glass over fresh ice with a lime wedge, pale coral liquid, A&A watercolor.

Cocktail· Tequila Blanco

Paloma

The Paloma is a built tequila highball: blanco tequila, fresh grapefruit juice, fresh lime juice, a quarter ounce of simple syrup, and a pinch of salt, lengthened with soda water over ice. The classic Mexican version uses grapefruit soda; building it with fresh juice lets you control the sweetness.

Pro tip

Salt the drink, not the rim. A pinch of salt in the body of a Paloma pulls the grapefruit forward in a way a salt rim never quite does.
