Tommy's Margarita
The Tommy's Margarita is a shaken cocktail made with 100% agave blanco tequila, fresh lime juice, and agave syrup, served over fresh ice in a rocks glass. It was created by Julio Bermejo at Tommy's Mexican Restaurant in San Francisco. Removing the orange liqueur lets the tequila carry the drink instead of being sweetened past itself.
Ingredients
- 2 oz blanco tequila (100% agave)
- 1 oz lime juice
- 0.5 oz agave syrup (2:1 agave to water)
- Lime wheel
- Flaky salt for the rim

Method
- Run a lime wedge around half the rim of a rocks glass and dip into flaky salt.
- Combine tequila, lime juice, and agave syrup in a shaker.
- Fill with ice and shake hard for 10 to 12 seconds.
- Strain into the prepared rocks glass over fresh ice.
- Garnish with a lime wheel.

Pro tip
Use 100% agave tequila. Mixto is half corn-derived alcohol and the off-notes will only get louder when you sweeten with agave. Thin your agave syrup 2:1 with warm water before measuring so it integrates cleanly when shaken.
