Bee's Knees
The Bee's Knees is a shaken Prohibition-era gin sour of London dry gin, fresh lemon juice, and honey syrup, served up in a chilled coupe with a lemon peel. The honey was originally used to mask the harshness of bathtub gin; today it adds floral depth to a properly distilled spirit. Use honey syrup, not raw honey, since raw honey will not fully incorporate even with a hard shake.
Ingredients
- 2 oz London dry gin
- 0.75 oz fresh lemon juice
- 0.75 oz honey syrup

Method
- Combine gin, lemon juice, and honey syrup in a shaker.
- Add ice and shake hard for 12 seconds.
- Double-strain into a chilled coupe.
- Express a lemon peel over the drink and drop it in or discard.
